The consumption of fresh cheeses is a relatively recent habit. In the past, producers rarely consumed fresh cheeses—ricotta, for example—usually only during the seasonal movements between mountain and valley or when relocating from one farm to another.

Preserving fresh cheeses would also have been difficult back then, whereas today it’s a success thanks to constant use of suitable temperatures and modern wrapping materials.
