Food pairing
Primosale can be enjoyed on its own or seasoned with a drizzle of extra virgin olive oil and a pinch of black pepper for a light and flavourful appetiser. It’s also excellent cubed and added to salads for a creamy, tasty touch.

We recommend pairing Primosale with fresh white wines that are delicately smooth and savoury, possibly with a touch of sparkle—such as Chardonnay, Pinot Bianco, Roero Arneis, Locorotondo, or Ischia Bianco.
Deepening
The production process of Primosale is relatively simple and aims to preserve the freshness and purity of the milk used.
Immediately after milk coagulation, the curd is broken, placed into moulds, and then salted by immersion in brine. This step not only contributes to the cheese's characteristic flavour but also acts as a natural preservative.
Unlike other cheeses that require longer ageing periods, Primosale is ready to be consumed just a few hours after salting.
One of its unique features is its soft and moist texture, paired with a delicate yet rich flavour that reflects the quality of the whole cow’s milk from which it is made. Its simple production and short time between processing and consumption allow the freshness of the milk to shine through.
