Food pairing

Italico cheese is distinguished by its soft and creamy texture, perfect for pairing with fig jam or chestnut honey, for a taste experience that balances sweetness and savoriness. Also excellent as an ingredient to enrich creamy risottos or baked dishes, it lends itself to multiple uses in the kitchen, enhancing the freshness of any dish.

Wine pairing

Italico cheese pairs perfectly with fresh, fruity white wines, such as a Vermentino or Soave, which enhance its creaminess without overpowering its delicate flavor. A brut sparkling wine or a sparkling rosé are also excellent choices for a lively and pleasant contrast.

Deepening
Italico was born in the 1930s, a period of innovation in the cheesemaking tradition of northern Italy, particularly in Lombardy and Piedmont. Here, the fertile land and ancient vocation for livestock farming have favored the creation of a soft, semi-mature cheese, designed to meet the growing demand for fresh, versatile products with a delicate flavor. The name itself evokes the Italian identity and the desire to offer a simple yet innovative product, suitable both as a table cheese and as an ingredient in cooking. The production of Italico begins with the use of whole cow's milk from local farms, located a short distance from the dairy. This short supply chain guarantees the freshness and quality of the raw materials, while also enhancing local resources and supporting a sustainable production model. Italico cheese is made using a meticulous process: the milk is coagulated at a controlled temperature, and the curd is delicately broken and worked to maintain its soft, uniform texture. The brief aging process in optimal conditions allows the cheese to develop a balanced flavor, with sweet and delicate notes, and a soft texture that makes it incredibly versatile. This artisanal approach, combined with the quality of the local milk and the expertise of the cheesemakers, makes Italico a cheese that celebrates the intersection of tradition and innovation. It is a product that represents the authenticity of our dairy history and brings all the genuine flavor of Italian tradition to the table.
