PDO Gorgonzola Dolce pairs well with a wide variety of wines, starting from the range of passito wines. The best white wines to pair are Riesling, Pinot Bianco, Orvieto Classico, Frascati Superiore, Dry Malvasia, and Gavi. Among rosé wines, we recommend Chiaretto del Garda or Lagrein Kretzer.
Deepening
Gorgonzola PDO, one of Italy’s most renowned cheeses, boasts a history dating back to around the year 879. Originating from the namesake town in Lombardy, it is the result of centuries of cheesemaking tradition.
Today, its production follows a strictly regulated process. Gorgonzola is produced in two main varieties: Dolce and Piccante. The main difference lies in the ageing process and flavour. Gorgonzola Dolce, with around two months of ageing, is soft and creamy with a mild and slightly sweet taste, ideal for spreading or use in sauces. In contrast, Gorgonzola Piccantematures for a longer period, gaining a firmer texture and a stronger, more intense flavour, perfect for lovers of bold cheeses.
The PDO designation of Gorgonzola protects its origin and traditional production methods, ensuring consistently high quality.
