We have been making it for over a century with the same care, using only local milk, ancient artisanal methods, complemented by modern technologies, and strictly adhering to the regulations.

Food pairing

You can enjoy it on its own, but you can also accompany it with crusty bread or jam for a quick starter. It is perfect to enrich pasta, risottos, soups, but also sandwiches or focaccia.

Wine pairing

It can be paired with still red wines such as Merlot or Pinot, but also with light, young, dry sparkling wines.

Deepening
Taleggio PDO is a square-shaped cheese weighing around 2.2 kg, part of the "washed rind" family. It undergoes weekly brushing with water and salt, which gives it its distinctive colouring. Known for its rich flavour and soft texture, Taleggio was first produced in the Taleggio Valley, from which it takes its name, and has historical roots dating back to the 10th century. Lombardy's PDO cheeses are the heart of our production. Taleggio, Gorgonzola, and Quartirolo Lombardo represent the essence of the dairy tradition in our region, symbols of a culture we carefully preserve with dedication. Every day, we work to ensure their quality and authenticity. Each PDO product we create is the result of production processes regulated by precise standards, requiring technical knowledge, genuine passion, and constant commitment.
