Deepening
Stracchino is rooted in the rich cheesemaking tradition of the Po Valley, where the favourableclimate and abundant vegetation create ideal conditions for livestock and dairy production. The name “stracchino” comes from the old Lombard term “stracch,” referring to “tired” cows returning in autumn from the Alps, when their milk acquired unique qualities perfect for making this cheese. Today, Lactose-Free Stracchino meets the needs of those looking for a light, easily digestible product without sacrificing authentic flavour. It is made from high-quality cow’s milk sourced from farms close to our dairy, ensuring freshness and purity while supporting a short and sustainable supply chain.
What makes it truly special is its lactose-free formulation: through a natural process, lactose is broken down into glucose and galactose, making the cheese easier to digest without altering its taste, creaminess, or texture. This way, Stracchino retains its soft and velvety character, with the fresh and delicate flavor that defines it, while also being suitable for those who are lactose intolerant.
Its lactose-free content (<0.1%, contains glucose and galactose resulting from lactose breakdown) makes it ideal for people with intolerances, without compromising flavour or creaminess. Lactose-Free Stracchino is the perfect balance of tradition and innovation, offering everyone a genuine, light product that celebrates Italian cheesemaking excellence in every bite.
