Deepening
Taleggio PDO is a square-shaped cheese weighing around 2.2 kg, part of the "washed rind" family. It undergoes weekly brushing with water and salt, which gives it its distinctive colouring.
Known for its rich flavour and soft texture, Taleggio was first produced in the Taleggio Valley, from which it takes its name, and has historical roots dating back to the 10th century.
